A delicious and colorful burrito bowl featuring juicy grilled chicken, fresh veggies, and bold flavors, perfect for lunch or dinner.


Ingredients

  • 1 grilled chicken breast, chopped
  • 1/2 cup cooked black beans
  • 1/2 cup corn (fresh, canned, or roasted)
  • 1/2 cup chopped romaine lettuce
  • 1/4 cup pico de gallo (tomato, onion, cilantro, lime)
  • 2 tbsp guacamole
  • Optional base: white or brown rice, quinoa, or cauliflower rice
  • Seasonings: cumin, chili powder, paprika, garlic powder, salt & pepper

Instructions

  1. Season the chicken breast with chili powder, garlic, paprika, cumin, salt, and pepper. Grill or pan-sear until it is juicy and golden.
  2. Add a warm scoop of your chosen base (rice or quinoa) to your bowl.
  3. Place romaine lettuce, corn, and black beans in separate sections on top of the base.
  4. Spoon in some fresh pico de gallo and a scoop of guacamole.
  5. Arrange everything nicely in a deep bowl and serve warm or chilled.

Notes

Use a meat thermometer to ensure your chicken reaches a temperature of 165°F for safety. Feel free to mix in additional vegetables for extra flavor and nutrition.
