Ingredients

- 1 grilled chicken breast, chopped
- 1/2 cup cooked black beans
- 1/2 cup corn (fresh, canned, or roasted)
- 1/2 cup chopped romaine lettuce
- 1/4 cup pico de gallo (tomato, onion, cilantro, lime)
- 2 tbsp guacamole
- Optional base: white or brown rice, quinoa, or cauliflower rice
- Seasonings: cumin, chili powder, paprika, garlic powder, salt & pepper
Instructions
- Season the chicken breast with chili powder, garlic, paprika, cumin, salt, and pepper. Grill or pan-sear until it is juicy and golden.
- Add a warm scoop of your chosen base (rice or quinoa) to your bowl.
- Place romaine lettuce, corn, and black beans in separate sections on top of the base.
- Spoon in some fresh pico de gallo and a scoop of guacamole.
- Arrange everything nicely in a deep bowl and serve warm or chilled.
Notes
Use a meat thermometer to ensure your chicken reaches a temperature of 165°F for safety. Feel free to mix in additional vegetables for extra flavor and nutrition.
