- 1/2 cup basmati or jasmine rice (cooked)
- 4 slices halloumi cheese
- 1/2 cup cherry tomatoes, halved
- 1/4 cucumber, sliced
- 4–5 kalamata and green olives
- 1/4 small red onion, thinly sliced
- 2 tbsp tzatziki sauce
- Fresh parsley, chopped
- Olive oil (for grilling)
Instructions
- Prepare the rice according to package instructions. Fluff it and set aside.
- Heat a skillet over medium heat, adding a drizzle of olive oil. Grill the halloumi slices for 2–3 minutes on each side until they are golden.
- Slice the tomatoes, cucumbers, and onions. Chop the parsley.
- In a bowl, layer the cooked rice, grilled halloumi, tomatoes, cucumber, olives, red onion, and a dollop of tzatziki.
- Sprinkle with chopped parsley and serve immediately.
Notes
Best enjoyed immediately after preparation. Can customize veggies based on preference.
