Description

A delightful and fresh meal featuring crispy grilled halloumi cheese, crunchy veggies, and a creamy tzatziki sauce. Perfect for lunch, dinner, or a quick healthy snack!


Ingredients

  • 1/2 cup basmati or jasmine rice (cooked)
  • 4 slices halloumi cheese
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cucumber, sliced
  • 45 kalamata and green olives
  • 1/4 small red onion, thinly sliced
  • 2 tbsp tzatziki sauce
  • Fresh parsley, chopped
  • Olive oil (for grilling)

Instructions

  1. Prepare the rice according to package instructions. Fluff it and set aside.
  2. Heat a skillet over medium heat, adding a drizzle of olive oil. Grill the halloumi slices for 2–3 minutes on each side until they are golden.
  3. Slice the tomatoes, cucumbers, and onions. Chop the parsley.
  4. In a bowl, layer the cooked rice, grilled halloumi, tomatoes, cucumber, olives, red onion, and a dollop of tzatziki.
  5. Sprinkle with chopped parsley and serve immediately.

Notes

Best enjoyed immediately after preparation. Can customize veggies based on preference.
