A luscious chocolate cake infused with cassis liqueur, perfect for special occasions.
Ingredients

- 1 ¾ cups all-purpose flour
- 2 cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup cassis liqueur
- 1 cup chocolate ganache (for frosting)
- Fresh berries (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla to the dry ingredients and mix until well combined.
- Slowly stir in boiling water until the batter is smooth.
- Divide the batter evenly between the prepared pans.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow cakes to cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
- Once cooled, brush each layer with cassis liqueur.
- Assemble the cake by placing one layer on a serving plate, spreading a layer of ganache on top, and topping with the second layer.
- Frost the outside of the cake with remaining ganache and garnish with fresh berries.
