A quick and healthy meal combining protein from eggs and a variety of fruits, ideal for breakfast or a light meal.
Ingredients

- 2 large eggs
- 1 small banana
- 1 mandarin orange
- 1/4 cup blueberries
- 1 tbsp raw pumpkin seeds
- 1 tbsp chopped walnuts
Instructions
- Crack and scramble the eggs in a nonstick skillet with a tiny bit of oil or butter. Cook until fluffy and golden.
- Slice up the banana, peel the orange, and rinse the blueberries.
- In a small bowl or on the plate, add the pumpkin seeds and walnuts.
- Arrange everything on a plate.
Notes
Serve right after preparing; can be enjoyed alone or with tea/coffee. Store leftovers in an airtight container for 1-2 days. Reheat eggs gently before serving.
