Ingredients

  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 tablespoon instant coffee (optional)
  • 1 cup heavy cream
  • 8 ounces dark chocolate, finely chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the milk, vegetable oil, eggs, and vanilla extract to the dry ingredients and beat until well mixed.
  4. Stir in the boiling water and optional instant coffee.
  5. Divide the batter into the prepared pans and bake for 30-35 minutes.
  6. Allow the cakes to cool for 10 minutes, then transfer them to a wire rack.
  7. For the ganache, heat the heavy cream until simmering, then stir in the dark chocolate until smooth.
  8. Pour the ganache over the cooled cakes before serving.

Notes

Store leftover cake in an airtight container for up to three days at room temperature or refrigerate for a week. For freezing, wrap individual slices tightly and consume within three months.
