- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 tablespoon instant coffee (optional)
- 1 cup heavy cream
- 8 ounces dark chocolate, finely chopped
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, mix the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the milk, vegetable oil, eggs, and vanilla extract to the dry ingredients and beat until well mixed.
- Stir in the boiling water and optional instant coffee.
- Divide the batter into the prepared pans and bake for 30-35 minutes.
- Allow the cakes to cool for 10 minutes, then transfer them to a wire rack.
- For the ganache, heat the heavy cream until simmering, then stir in the dark chocolate until smooth.
- Pour the ganache over the cooled cakes before serving.
Notes
Store leftover cake in an airtight container for up to three days at room temperature or refrigerate for a week. For freezing, wrap individual slices tightly and consume within three months.
