  • 200g (7 oz) chocolate cookies (Oreos or digestive biscuits)
  • 100g (1/2 cup) unsalted butter, melted
  • 150g (5.3 oz) dark chocolate (70% cocoa), chopped
  • 1 cup (240ml) heavy cream
  • 2 tbsp powdered sugar
  • 150g (5.3 oz) milk chocolate, chopped
  • 150g (5.3 oz) white chocolate, chopped
  • Chocolate shavings or curls
  • Fresh berries
  • Cocoa powder
  • Edible gold leaf for decoration (optional)

Instructions

  1. Make the Base: Crush the cookies in a food processor. Add melted butter and mix until it looks like wet sand. Press this mixture into the bottom of an 8-inch springform pan and refrigerate to set.
  2. Prepare the Dark Chocolate Mousse: Melt the dark chocolate. In a separate bowl, whip the cream with powdered sugar until soft peaks form. Fold the melted dark chocolate into the whipped cream. Spread this mousse over the cookie base and refrigerate.
  3. Prepare the Milk Chocolate Mousse: Repeat the same process with the milk chocolate, creating a mousse. Layer it over the dark chocolate mousse and refrigerate again.
  4. Prepare the White Chocolate Mousse: Do the same with the white chocolate. Layer it on top of the milk chocolate mousse, smoothing the top with a spatula.
  5. Chill: Cover the cake and refrigerate for at least 240-360 minutes, or overnight if you can wait!
  6. Decorate and Serve: Carefully remove the cake from the pan. Decorate it with chocolate curls, fresh berries, or gold leaf for that extra touch. Slice and serve chilled to enjoy.
