- 200g (7 oz) chocolate cookies (Oreos or digestive biscuits)
- 100g (1/2 cup) unsalted butter, melted
- 150g (5.3 oz) dark chocolate (70% cocoa), chopped
- 1 cup (240ml) heavy cream
- 2 tbsp powdered sugar
- 150g (5.3 oz) milk chocolate, chopped
- 150g (5.3 oz) white chocolate, chopped
- Chocolate shavings or curls
- Fresh berries
- Cocoa powder
- Edible gold leaf for decoration (optional)
Instructions
- Make the Base: Crush the cookies in a food processor. Add melted butter and mix until it looks like wet sand. Press this mixture into the bottom of an 8-inch springform pan and refrigerate to set.
- Prepare the Dark Chocolate Mousse: Melt the dark chocolate. In a separate bowl, whip the cream with powdered sugar until soft peaks form. Fold the melted dark chocolate into the whipped cream. Spread this mousse over the cookie base and refrigerate.
- Prepare the Milk Chocolate Mousse: Repeat the same process with the milk chocolate, creating a mousse. Layer it over the dark chocolate mousse and refrigerate again.
- Prepare the White Chocolate Mousse: Do the same with the white chocolate. Layer it on top of the milk chocolate mousse, smoothing the top with a spatula.
- Chill: Cover the cake and refrigerate for at least 240-360 minutes, or overnight if you can wait!
- Decorate and Serve: Carefully remove the cake from the pan. Decorate it with chocolate curls, fresh berries, or gold leaf for that extra touch. Slice and serve chilled to enjoy.
