- 1 pie crust (store-bought or homemade)
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 3 large eggs
- 1/2 cup milk
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat the oven to 375ยฐF (190ยฐC).
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and sautรฉ until translucent.
- Add the chopped spinach to the skillet and cook until wilted.
- In a large bowl, whisk together the ricotta cheese, eggs, milk, salt, and pepper until smooth.
- Stir in the cooked onion and spinach mixture until well combined.
- Place the pie crust in a pie dish and pour the filling into the crust.
- Sprinkle grated Parmesan cheese on top.
- Bake for 30-35 minutes or until set and lightly golden.
- Let it cool for a few minutes before slicing and serving.
Notes
For a crispier crust, pre-bake the crust for about 10 minutes before adding the filling. Feel free to customize with additional ingredients like bacon or other vegetables.
