Ingredients

  • 1 pie crust (store-bought or homemade)
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 3 large eggs
  • 1/2 cup milk
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375ยฐF (190ยฐC).
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and sautรฉ until translucent.
  3. Add the chopped spinach to the skillet and cook until wilted.
  4. In a large bowl, whisk together the ricotta cheese, eggs, milk, salt, and pepper until smooth.
  5. Stir in the cooked onion and spinach mixture until well combined.
  6. Place the pie crust in a pie dish and pour the filling into the crust.
  7. Sprinkle grated Parmesan cheese on top.
  8. Bake for 30-35 minutes or until set and lightly golden.
  9. Let it cool for a few minutes before slicing and serving.

Notes

For a crispier crust, pre-bake the crust for about 10 minutes before adding the filling. Feel free to customize with additional ingredients like bacon or other vegetables.
