- 1 pie crust (store-bought or homemade)
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 3 large eggs
- 1/2 cup milk
- Salt and pepper to taste
- 1/4 teaspoon nutmeg (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté the onion until translucent.
- Add the chopped spinach and cook until wilted, then remove from heat.
- In a bowl, whisk together the ricotta cheese, eggs, milk, salt, pepper, and nutmeg.
- Stir in the sautéed spinach and onion mixture.
- Pour the filling into the prepared pie crust.
- Bake for 30-35 minutes or until the quiche is set and golden on top.
- Allow to cool slightly before slicing and serving.
Notes
For extra flavor, add garlic powder or fresh herbs. Quiche can be stored in the refrigerator for 3-4 days or frozen for up to 2 months.
