Ingredients

  • 1 pie crust (store-bought or homemade)
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 3 large eggs
  • 1/2 cup milk
  • Salt and pepper to taste
  • 1/4 teaspoon nutmeg (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté the onion until translucent.
  3. Add the chopped spinach and cook until wilted, then remove from heat.
  4. In a bowl, whisk together the ricotta cheese, eggs, milk, salt, pepper, and nutmeg.
  5. Stir in the sautéed spinach and onion mixture.
  6. Pour the filling into the prepared pie crust.
  7. Bake for 30-35 minutes or until the quiche is set and golden on top.
  8. Allow to cool slightly before slicing and serving.

Notes

For extra flavor, add garlic powder or fresh herbs. Quiche can be stored in the refrigerator for 3-4 days or frozen for up to 2 months.
