- 3/4 cup (95g) all-purpose flour
- 1/4 cup (20g) unsweetened cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 4 large eggs
- 3/4 cup (150g) granulated sugar
- 2 tbsp vegetable oil
- 1 tsp vanilla extract
- 1–2 tsp purple gel food coloring
- 8 oz (225g) cream cheese, softened
- 1/4 cup (60g) unsalted butter, softened
- 1 1/2 cups (190g) powdered sugar
- 1 tsp vanilla extract
- Powdered sugar for dusting
- Fresh berries or edible flowers (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 10×15-inch jelly roll pan and line it with parchment paper.
- In a medium bowl, sift together the flour, cocoa powder, baking powder, and salt. Set aside.
- In a large bowl, beat the eggs and sugar on high speed until thick and fluffy (about 3-5 minutes). Reduce speed, add vegetable oil, vanilla extract, and purple gel food coloring. Mix until combined.
- Fold dry ingredients into the wet mixture until just combined.
- Pour batter into the prepared pan, spread evenly, and bake for 10-12 minutes until the cake springs back when touched.
- Invert the warm cake onto a clean towel dusted with powdered sugar and roll it up gently to let it cool completely.
- For the filling, beat cream cheese and butter until smooth, then gradually add powdered sugar and vanilla extract, mixing until fluffy.
- Unroll the cooled cake, spread the cream cheese filling, and re-roll tightly.
- Dust with powdered sugar, garnish with berries or edible flowers, slice, and serve chilled or at room temperature.
Notes
Make sure to roll the cake while it’s still warm to prevent cracks, and use enough powdered sugar on the towel to avoid sticking.
