- 4 large eggs
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Purple food coloring (as desired)
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract (for filling)
- 1 cup heavy whipping cream (optional for topping)
Instructions
- Preheat your oven to 350°F (175°C) and line a 15×10-inch jelly roll pan with parchment paper.
- In a large bowl, beat the eggs and sugar until light and frothy. Mix in vegetable oil, buttermilk, and vanilla extract.
- In another bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt. Gradually mix this into the wet ingredients until just combined.
- Add purple food coloring until you achieve your desired hue. Pour the batter into the pan and smooth it out evenly.
- Bake for 12-15 minutes or until the cake springs back when pressed.
- While the cake bakes, prepare the filling by mixing cream cheese, powdered sugar, and vanilla until smooth.
- Once baked, carefully turn the cake onto a powdered sugar-dusted kitchen towel and peel off the parchment.
- Spread the cream cheese filling over the cake, roll it up from one end using the towel, and let it cool completely.
- When cool, unroll the cake, remove the towel, and re-roll it without the towel, seam side down.
- Optionally, whip the heavy cream and spread it on top for an extra treat.
Notes
Store any leftover cake roll in an airtight container in the refrigerator for 3-4 days, or freeze wrapped tightly for longer storage. Use room temperature eggs for better mixing.
