Ingredients

  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups pitted cherries, fresh or frozen
  • 1/4 cup granulated sugar (for cherry filling)
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1 1/2 cups heavy cream, chilled
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for whipped cream)
  • Additional cherries (for decoration)
  • Chocolate shavings or cocoa powder (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 10×15-inch jelly roll pan with parchment paper.
  2. In a large bowl, beat the eggs, granulated sugar, and vanilla until thick and creamy.
  3. Sift in the cocoa powder, flour, baking powder, and salt. Gently fold this mixture into the egg mixture.
  4. Pour the batter into the prepared pan and spread it evenly. Bake for 12-15 minutes until set.
  5. In a saucepan, combine the cherries and sugar. Cook over medium heat until the cherries soften. Mix the cornstarch with water and stir it into the cherry mixture to thicken. Let cool.
  6. For the whipped cream, beat the heavy cream, powdered sugar, and vanilla together until stiff peaks form.
  7. Once the cake is cooled, carefully spread whipped cream over it, add the cherry filling, and roll it up tightly.
  8. Refrigerate the rolled cake for at least one hour to set.
  9. Garnish with additional cherries and chocolate shavings or a dusting of cocoa powder. Slice and serve.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days or freeze for up to a month. Thaw in the refrigerator before serving.
