Ingredients

- 2 and 1/2 cups all-purpose flour
- 1 and 1/2 cups granulated sugar
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup whole milk
- 1/2 cup unsalted butter, softened
- 2 teaspoons vanilla extract
- 4 large egg whites
- 1 cup unsalted butter, softened (for frosting)
- 4 cups powdered sugar (for frosting)
- 1/2 teaspoon vanilla extract (for frosting)
- 2–3 tablespoons milk (for frosting)
- Purple or lavender food coloring
- Fondant butterflies and flowers for decoration
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, mix the milk, softened butter, and vanilla extract. Add this wet mixture to the dry ingredients and mix until just combined.
- In another clean bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the cake batter.
- Divide the batter evenly between the two prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool completely on a wire rack.
- To make the frosting, beat the softened butter in a large bowl until creamy. Gradually add the powdered sugar, mixing until smooth. Stir in the vanilla extract and milk until you reach your desired consistency. Add food coloring as desired.
- Once the cakes are cool, place one layer on a serving plate. Spread a layer of frosting on top, place the second layer on top, and frost the entire cake.
- Decorate with fondant butterflies and flowers as desired.
Notes
Make sure to store the leftover cake in an airtight container at room temperature for up to three days.
