Ingredients

  • 2 and 1/2 cups all-purpose flour
  • 1 and 1/2 cups granulated sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup whole milk
  • 1/2 cup unsalted butter, softened
  • 2 teaspoons vanilla extract
  • 4 large egg whites
  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar (for frosting)
  • 1/2 teaspoon vanilla extract (for frosting)
  • 23 tablespoons milk (for frosting)
  • Purple or lavender food coloring
  • Fondant butterflies and flowers for decoration

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, mix the milk, softened butter, and vanilla extract. Add this wet mixture to the dry ingredients and mix until just combined.
  4. In another clean bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the cake batter.
  5. Divide the batter evenly between the two prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool completely on a wire rack.
  6. To make the frosting, beat the softened butter in a large bowl until creamy. Gradually add the powdered sugar, mixing until smooth. Stir in the vanilla extract and milk until you reach your desired consistency. Add food coloring as desired.
  7. Once the cakes are cool, place one layer on a serving plate. Spread a layer of frosting on top, place the second layer on top, and frost the entire cake.
  8. Decorate with fondant butterflies and flowers as desired.

Notes

Make sure to store the leftover cake in an airtight container at room temperature for up to three days.
