Description

Ingredients

  • 4 large eggs, at room temperature
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup all-purpose flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 2 cups pitted cherries, fresh or frozen
  • 1/4 cup granulated sugar (for cherries)
  • 1 tbsp cornstarch
  • 1 tbsp water
  • 1 1/2 cups heavy cream, chilled
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract (for whipped cream)
  • Additional cherries, for decoration
  • Chocolate shavings or cocoa powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 10×15-inch jelly roll pan with parchment paper.
  2. In a large mixing bowl, beat the eggs, granulated sugar, and vanilla extract until thick and pale (about 5 minutes).
  3. Sift together cocoa powder, flour, baking powder, and salt. Fold these dry ingredients into the egg mixture. Pour the batter into the prepared pan and bake for 12-15 minutes.
  4. In a saucepan, combine the cherries and 1/4 cup granulated sugar. Cook over medium heat until the cherries soften. Mix cornstarch with water and stir it into the cherry mixture until thickened. Let it cool completely.
  5. In another bowl, beat chilled heavy cream, 1/4 cup powdered sugar, and 1 tsp vanilla extract until stiff peaks form.
  6. Spread the whipped cream over the cooled cake. Add the cooled cherry filling and roll the cake using the parchment paper.
  7. Refrigerate for at least 1 hour to set.
  8. Garnish with additional cherries and chocolate shavings, slice, and serve.

Notes

For best results, make sure your eggs are at room temperature and be gentle when folding in dry ingredients to maintain a light texture.
