  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup all-purpose flour
  • 1/4 tsp baking powder

  • 2 cups pitted cherries, fresh or frozen
  • 1/4 cup granulated sugar (for cherries)
  • 1 tbsp cornstarch
  • 1 tbsp water
  • 1 1/2 cups heavy cream, chilled
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract (for cream)
  • Additional cherries, for decoration
  • Chocolate shavings or cocoa powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 10×15-inch jelly roll pan with parchment paper.
  2. In a large mixing bowl, beat the eggs, 3/4 cup granulated sugar, and 1 tsp vanilla extract until thick and pale (about 5 minutes).
  3. Sift together the cocoa powder, flour, baking powder, and salt. Gently fold the dry ingredients into the egg mixture.
  4. Pour the batter into the prepared pan and bake for 12-15 minutes.
  5. For the cherry filling, combine 2 cups of cherries and 1/4 cup of granulated sugar in a saucepan and cook over medium heat. Mix 1 tbsp cornstarch with 1 tbsp water and stir into the cherry mixture. Cook until thickened and let cool.
  6. For the whipped cream filling, beat the chilled heavy cream, 1/4 cup powdered sugar, and 1 tsp vanilla extract until stiff peaks form.
  7. Assemble the roll cake by spreading the whipped cream over the cooled cake, adding the cherry filling, and rolling it up from one end. Refrigerate for at least 1 hour.
  8. Garnish with additional cherries and chocolate shavings, slice, and serve.

Notes

Ensure eggs are at room temperature for a lighter sponge. Use a serrated knife for clean slices.
