- 4 large eggs, at room temperature
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/4 cup unsweetened cocoa powder
- 1/4 cup all-purpose flour
- 1/4 tsp baking powder
- 1/4 tsp salt
- 2 cups pitted cherries, fresh or frozen
- 1/4 cup granulated sugar (for cherries)
- 1 tbsp cornstarch
- 1 tbsp water
- 1 1/2 cups heavy cream, chilled
- 1/4 cup powdered sugar
- 1 tsp vanilla extract (for cream)
- Additional cherries, for decoration
- Chocolate shavings or cocoa powder
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a 10×15-inch jelly roll pan with parchment paper.
- In a large mixing bowl, beat the eggs, 3/4 cup granulated sugar, and 1 tsp vanilla extract until thick and pale (about 5 minutes).
- Sift together the cocoa powder, flour, baking powder, and salt. Gently fold the dry ingredients into the egg mixture.
- Pour the batter into the prepared pan and bake for 12-15 minutes.
- For the cherry filling, combine 2 cups of cherries and 1/4 cup of granulated sugar in a saucepan and cook over medium heat. Mix 1 tbsp cornstarch with 1 tbsp water and stir into the cherry mixture. Cook until thickened and let cool.
- For the whipped cream filling, beat the chilled heavy cream, 1/4 cup powdered sugar, and 1 tsp vanilla extract until stiff peaks form.
- Assemble the roll cake by spreading the whipped cream over the cooled cake, adding the cherry filling, and rolling it up from one end. Refrigerate for at least 1 hour.
- Garnish with additional cherries and chocolate shavings, slice, and serve.
Notes
Use a serrated knife to slice the cake for clean edges. Store leftovers in the refrigerator wrapped tightly for up to 3 days.
