  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract (for whipped cream)
  • Additional cherries, for decoration
  • Chocolate shavings or cocoa powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 10×15-inch jelly roll pan with parchment paper.
  2. Make the Chocolate Sponge Cake: In a bowl, beat the eggs, granulated sugar, and vanilla until thick. Sift the dry ingredients and fold them into the egg mixture. Pour the batter into the pan and bake for 12-15 minutes.
  3. Prepare the Cherry Filling: Cook the cherries with sugar until softened. Make a slurry with cornstarch and water, add it to the cherry mixture, and cook until thickened. Let it cool completely.
  4. Make the Whipped Cream Filling: Beat the heavy cream, powdered sugar, and vanilla until stiff peaks form.
  5. Assemble the Roll Cake: Spread the whipped cream over the cooled cake. Top with the cooled cherry filling, roll up the cake, and refrigerate for 1 hour.
  6. Garnish with additional cherries and chocolate shavings, slice, and serve.
