Description

A delightful twist on the classic Black Forest cake with rich chocolate and sweet cherries, wrapped in a soft sponge cake and topped with whipped cream.


Ingredients

  • 4 large eggs, at room temperature
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup all-purpose flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 2 cups pitted cherries, fresh or frozen
  • 1/4 cup granulated sugar (for cherry filling)
  • 1 tbsp cornstarch
  • 1 tbsp water
  • 1 1/2 cups heavy cream, chilled
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract (for whipped cream)
  • Additional cherries, for decoration
  • Chocolate shavings or cocoa powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 10×15-inch jelly roll pan with parchment paper.
  2. In a large mixing bowl, beat the eggs, granulated sugar, and vanilla extract until thick and pale, about 5 minutes.
  3. In another bowl, sift together cocoa powder, flour, baking powder, and salt. Gently fold the dry ingredients into the egg mixture until just combined. Pour into the prepared pan and bake for 12-15 minutes.
  4. For the cherry filling: In a saucepan, combine cherries and sugar, cooking over medium heat until softened. Mix cornstarch with water and stir into the cherry mixture until thickened. Let cool.
  5. For the whipped cream filling: Beat chilled heavy cream, powdered sugar, and vanilla until stiff peaks form.
  6. Once the cake cools, spread whipped cream over it, add cherry filling, and roll it up tightly using the parchment. Refrigerate for at least 1 hour.
  7. Garnish with cherries and chocolate shavings before serving. Slice and enjoy!

Notes

Make sure your eggs are at room temperature for better rising. Gently fold dry ingredients to keep the mixture airy.
