A delightful twist on the classic Black Forest cake featuring layers of soft chocolate cake, creamy whipped cream, and sweet cherries.

- 4 large eggs, at room temperature
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/4 cup unsweetened cocoa powder
- 1/4 cup all-purpose flour
- 1/4 tsp baking powder
- 1/4 tsp salt
- 2 cups pitted cherries, fresh or frozen
- 1/4 cup granulated sugar (for cherry filling)
- 1 tbsp cornstarch
- 1 tbsp water
- 1 1/2 cups heavy cream, chilled
- 1/4 cup powdered sugar
- 1 tsp vanilla extract (for whipped cream)
- Additional cherries, for decoration
- Chocolate shavings or cocoa powder for garnish
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a 10×15-inch jelly roll pan with parchment paper.
- In a large bowl, beat the eggs, sugar, and vanilla extract until thick and pale (about 5 minutes).
- In another bowl, sift together cocoa powder, flour, baking powder, and salt. Fold the dry ingredients into the egg mixture until just combined. Pour into the pan and bake for 12-15 minutes, or until the cake springs back when touched.
- For the cherry filling, combine cherries and sugar in a saucepan over medium heat until softened. Mix cornstarch with water to create a slurry, stir into cherries, and cook until thickened. Cool completely.
- For the whipped cream, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Once the cake has cooled, spread whipped cream over it, then spoon the cooled cherry filling on top. Roll the cake carefully using parchment paper to form a log. Refrigerate for at least 1 hour to set.
- Garnish with cherries and chocolate shavings or cocoa powder. Slice and serve.
Notes
Serve chilled, and can be stored in the refrigerator for up to 3 days or frozen for a month. Use room temperature eggs for better volume.
