Description

A delightful twist on the classic Black Forest cake featuring layers of soft chocolate cake, creamy whipped cream, and sweet cherries.


Ingredients

  • 4 large eggs, at room temperature
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup all-purpose flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 2 cups pitted cherries, fresh or frozen
  • 1/4 cup granulated sugar (for cherry filling)
  • 1 tbsp cornstarch
  • 1 tbsp water
  • 1 1/2 cups heavy cream, chilled
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract (for whipped cream)
  • Additional cherries, for decoration
  • Chocolate shavings or cocoa powder for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 10×15-inch jelly roll pan with parchment paper.
  2. In a large bowl, beat the eggs, sugar, and vanilla extract until thick and pale (about 5 minutes).
  3. In another bowl, sift together cocoa powder, flour, baking powder, and salt. Fold the dry ingredients into the egg mixture until just combined. Pour into the pan and bake for 12-15 minutes, or until the cake springs back when touched.
  4. For the cherry filling, combine cherries and sugar in a saucepan over medium heat until softened. Mix cornstarch with water to create a slurry, stir into cherries, and cook until thickened. Cool completely.
  5. For the whipped cream, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  6. Once the cake has cooled, spread whipped cream over it, then spoon the cooled cherry filling on top. Roll the cake carefully using parchment paper to form a log. Refrigerate for at least 1 hour to set.
  7. Garnish with cherries and chocolate shavings or cocoa powder. Slice and serve.

Notes

Serve chilled, and can be stored in the refrigerator for up to 3 days or frozen for a month. Use room temperature eggs for better volume.
