Description

A delightful eggless fresh fruit cake that’s light, fluffy, and packed with fresh fruits, perfect for any occasion.


Ingredients

  • 3 cups all-purpose flour
  • 2 tsp baking powder
  • 2 cups yogurt
  • 1 tsp baking soda
  • 1 1/2 cups castor sugar
  • 1 cup vegetable oil
  • 2 drops almond extract
  • Zest of 1 orange
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1 1/2 cups fresh fruit (chopped)
  • 2 cups whipping cream
  • 1/4 cup cream cheese
  • 1 tsp vanilla extract
  • Fresh fruit (for decoration)
  • Flaked almonds
  • 1 tbsp corn syrup
  • 1 tbsp water

Instructions

  1. Preheat the oven to 180°C (350°F) and line two round baking pans with parchment paper.
  2. In a small bowl, mix yogurt and baking soda. Let sit for 5 minutes.
  3. Whisk together vegetable oil and sugar in a large bowl until pale.
  4. Add the yogurt mixture, almond extract, and orange zest. Fold in sifted flour and baking powder.
  5. Pour the batter into the prepared pans and bake for 25-30 minutes. Allow to cool completely.
  6. In a saucepan, combine granulated sugar and water over medium heat until dissolved. Add chopped fruit and cook until softened, then strain and reserve syrup.
  7. Whip the cream until soft peaks form. Add cream cheese and vanilla, whip until stiff peaks form. Refrigerate until ready to use.
  8. Assemble the cake with one layer on a serving base, soak with reserved syrup, spread fruit filling, place the second layer on top.
  9. Frost with whipped cream, press flaked almonds around the sides, and decorate with fresh fruit.
  10. Chill the cake until ready to serve, slice, and enjoy!
