A delightful eggless fresh fruit cake that’s light, fluffy, and packed with fresh fruits, perfect for any occasion.
Ingredients

- 3 cups all-purpose flour
- 2 tsp baking powder
- 2 cups yogurt
- 1 tsp baking soda
- 1 1/2 cups castor sugar
- 1 cup vegetable oil
- 2 drops almond extract
- Zest of 1 orange
- 1/2 cup granulated sugar
- 1/4 cup water
- 1 1/2 cups fresh fruit (chopped)
- 2 cups whipping cream
- 1/4 cup cream cheese
- 1 tsp vanilla extract
- Fresh fruit (for decoration)
- Flaked almonds
- 1 tbsp corn syrup
- 1 tbsp water
Instructions
- Preheat the oven to 180°C (350°F) and line two round baking pans with parchment paper.
- In a small bowl, mix yogurt and baking soda. Let sit for 5 minutes.
- Whisk together vegetable oil and sugar in a large bowl until pale.
- Add the yogurt mixture, almond extract, and orange zest. Fold in sifted flour and baking powder.
- Pour the batter into the prepared pans and bake for 25-30 minutes. Allow to cool completely.
- In a saucepan, combine granulated sugar and water over medium heat until dissolved. Add chopped fruit and cook until softened, then strain and reserve syrup.
- Whip the cream until soft peaks form. Add cream cheese and vanilla, whip until stiff peaks form. Refrigerate until ready to use.
- Assemble the cake with one layer on a serving base, soak with reserved syrup, spread fruit filling, place the second layer on top.
- Frost with whipped cream, press flaked almonds around the sides, and decorate with fresh fruit.
- Chill the cake until ready to serve, slice, and enjoy!
