A delightful, eggless fruit cake that combines the freshness of fruits with rich cream, perfect for any celebration.
Ingredients

- 3 cups all-purpose flour
- 2 tsp baking powder
- 2 cups yogurt
- 1 tsp baking soda
- 1 1/2 cups castor sugar
- 1 cup vegetable oil
- 2 drops almond extract
- Zest of 1 orange
- 1/2 cup granulated sugar
- 1/4 cup water
- 1 1/2 cups fresh fruit (chopped)
- 2 cups whipping cream
- 1/4 cup cream cheese
- 1 tsp vanilla extract
- Fresh fruit (for decoration)
- Flaked almonds
- 1 tbsp corn syrup
- 1 tbsp water
Instructions
- Preheat the oven to 180°C (350°F) and line two round baking pans with parchment paper.
- In a small bowl, mix yogurt and baking soda. Let it sit for 5 minutes until it becomes foamy.
- In a large bowl, whisk together vegetable oil and castor sugar until pale.
- Add the foamy yogurt mixture along with almond extract and orange zest, and mix well.
- Sift in flour and baking powder, and fold until combined.
- Pour the batter into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Allow to cool completely.
- For the fruit filling, combine granulated sugar and water in a saucepan over medium heat until dissolved. Add chopped fresh fruit and cook until slightly softened. Strain the fruit and reserve the syrup.
- Prepare the whipped cream frosting by whipping the cream until soft peaks form. Add cream cheese and vanilla, and whip until stiff peaks form. Refrigerate until ready.
- Assemble the cake: Place one layer on a serving base, soak it with syrup, spread fruit filling on it, place the second layer, spread whipped cream on top, and gently press down.
- Frost and decorate with more whipped cream, flaked almonds, and fresh fruit. Brush with fruit glaze made from corn syrup and water.
- Refrigerate until ready to serve. Slice and enjoy!

Store leftovers in the refrigerator covered for up to 3-4 days, or freeze slices for up to 2 months.
