Eggless Fresh Fruit Cake

Description

A delightful, eggless fruit cake that combines the freshness of fruits with rich cream, perfect for any celebration.


Ingredients

  • 3 cups all-purpose flour
  • 2 tsp baking powder
  • 2 cups yogurt
  • 1 tsp baking soda
  • 1 1/2 cups castor sugar
  • 1 cup vegetable oil
  • 2 drops almond extract
  • Zest of 1 orange
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1 1/2 cups fresh fruit (chopped)
  • 2 cups whipping cream
  • 1/4 cup cream cheese
  • 1 tsp vanilla extract
  • Fresh fruit (for decoration)
  • Flaked almonds
  • 1 tbsp corn syrup
  • 1 tbsp water

Instructions

  1. Preheat the oven to 180°C (350°F) and line two round baking pans with parchment paper.
  2. In a small bowl, mix yogurt and baking soda. Let it sit for 5 minutes until it becomes foamy.
  3. In a large bowl, whisk together vegetable oil and castor sugar until pale.
  4. Add the foamy yogurt mixture along with almond extract and orange zest, and mix well.
  5. Sift in flour and baking powder, and fold until combined.
  6. Pour the batter into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Allow to cool completely.
  7. For the fruit filling, combine granulated sugar and water in a saucepan over medium heat until dissolved. Add chopped fresh fruit and cook until slightly softened. Strain the fruit and reserve the syrup.
  8. Prepare the whipped cream frosting by whipping the cream until soft peaks form. Add cream cheese and vanilla, and whip until stiff peaks form. Refrigerate until ready.
  9. Assemble the cake: Place one layer on a serving base, soak it with syrup, spread fruit filling on it, place the second layer, spread whipped cream on top, and gently press down.
  10. Frost and decorate with more whipped cream, flaked almonds, and fresh fruit. Brush with fruit glaze made from corn syrup and water.
  11. Refrigerate until ready to serve. Slice and enjoy!

Notes

Store leftovers in the refrigerator covered for up to 3-4 days, or freeze slices for up to 2 months.
