A delightful eggless dessert that combines rich chocolate flavors with tangy cherries, perfect for celebrations.

- 1 1/2 cups all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1 cup milk
- 1 tablespoon vinegar or lemon juice
- 1 teaspoon vanilla extract
- 2 cups heavy whipping cream, chilled
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup canned or fresh cherries (pitted)
- 1/2 cup cherry syrup or juice
- 1/2 cup chocolate shavings or grated chocolate
Instructions
- Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
- In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and sugar.
- In a separate bowl, mix the milk and vinegar (or lemon juice) and let it sit for 5 minutes to curdle.
- Add the vegetable oil and vanilla extract to the curdled milk mixture.
- Gradually add the wet ingredients to the dry ingredients, whisking until you get a smooth batter. Do not overmix.
- Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool completely before removing them from the pans.
- In a chilled bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form. Keep refrigerated until ready to use.
- Slice each cake horizontally to make 4 thin layers.
- Place the first layer on a serving plate and brush generously with cherry syrup. Spread a layer of whipped cream over the cake and top with cherries.
- Repeat the process with the remaining layers, finishing with whipped cream on the top and sides of the cake.
- Press chocolate shavings onto the sides of the cake. Pipe dollops of whipped cream around the top edge and place cherries on each dollop. Sprinkle additional chocolate shavings on top.
- Refrigerate the cake for at least 2 hours before serving to let the flavors meld.
Notes
For the best texture, ensure your ingredients are at room temperature before mixing. Don’t skip the chilling step for the whipped cream. If you want a stronger cherry flavor, you can add a bit of cherry extract to the whipped cream.
