Ingredients

  • 1 tsp baking soda
  • 1⁄4 tsp salt
  • 1⁄4 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1⁄2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1⁄2 cup water
  • 1 tbsp white vinegar
  • 2 cups heavy cream
  • 1⁄2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 1⁄2 cups fresh or jarred cherries, pitted and halved
  • 1⁄4 cup granulated sugar
  • 1 tbsp lemon juice (optional)
  • 1 tbsp cornstarch (optional)
  • Shaved chocolate or chocolate curls (for garnish)
  • Fresh cherries (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  2. In a large bowl, sift together the all-purpose flour, cocoa powder, baking soda, and salt. Add the sugar and mix everything together.
  3. In another bowl, whisk together the vegetable oil, vanilla extract, buttermilk, and water.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until smooth. Finally, stir in the vinegar.
  5. Pour the batter evenly into the prepared cake pans and bake for 25-30 minutes.
  6. Cool the cakes for 10 minutes before transferring to a wire rack.
  7. For the cherry filling, combine pitted cherries and sugar in a saucepan over medium heat, cooking for about 5-7 minutes. Optionally, thicken using cornstarch.
  8. For the whipped cream frosting, beat heavy cream with powdered sugar and vanilla extract until soft peaks form.
  9. To assemble, slice the cakes in half horizontally, layer with whipped cream and cherry filling, and repeat until all layers are used.
  10. Chill before serving and garnish with chocolate and cherries. Enjoy!

Notes

Serve chilled with additional whipped cream and cherries on top. Store leftovers in the refrigerator for up to 3-4 days.
