- 1 1⁄2 cups all-purpose flour
- 1 tsp baking soda
- 1⁄4 tsp salt
- 1⁄4 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1⁄2 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup buttermilk
- 1⁄2 cup water
- 1 tbsp white vinegar
- 2 cups heavy cream
- 1⁄2 cup powdered sugar
- 1 tsp vanilla extract
- 1 1⁄2 cups fresh or jarred cherries, pitted and halved
- 1⁄4 cup granulated sugar
- 1 tbsp lemon juice (optional)
- 1 tbsp cornstarch (optional)
- Shaved chocolate or chocolate curls (for garnish)
- Fresh cherries (for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
- In a large bowl, sift together the all-purpose flour, cocoa powder, baking soda, and salt. Add the sugar and mix everything together.
- In another bowl, whisk together the vegetable oil, vanilla extract, buttermilk, and water.
- Gradually add the wet ingredients to the dry ingredients, stirring until smooth. Finally, stir in the vinegar.
- Pour the batter evenly into the prepared cake pans and bake for 25-30 minutes.
- Cool the cakes for 10 minutes before transferring to a wire rack.
- For the cherry filling, combine pitted cherries and sugar in a saucepan over medium heat, cooking for about 5-7 minutes. Optionally, thicken using cornstarch.
- For the whipped cream frosting, beat heavy cream with powdered sugar and vanilla extract until soft peaks form.
- To assemble, slice the cakes in half horizontally, layer with whipped cream and cherry filling, and repeat until all layers are used.
- Chill before serving and garnish with chocolate and cherries. Enjoy!
Notes
Serve chilled with additional whipped cream and cherries on top. Store leftovers in the refrigerator for up to 3-4 days.
