  • 1/2 cup water
  • 1 tbsp white vinegar
  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract (for frosting)
  • 1 1/2 cups fresh or jarred cherries, pitted and halved
  • 1/4 cup granulated sugar (for filling)
  • 1 tbsp lemon juice (optional, for filling)
  • 1 tbsp cornstarch (optional, to thicken)
  • Shaved chocolate or chocolate curls (for garnish)
  • Fresh cherries (whole or halved, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  2. In a large bowl, sift together the flour, cocoa powder, baking soda, and salt. Add the sugar and mix until well combined.
  3. In another bowl, whisk together the vegetable oil, vanilla extract, buttermilk, and water. Gradually add the wet mixture to the dry ingredients, stirring until smooth. Stir in the vinegar.
  4. Pour the batter evenly into the prepared cake pans. Bake for 25-30 minutes or until a toothpick comes out clean. Allow the cakes to cool completely.
  5. For the cherry filling, combine cherries and sugar in a saucepan over medium heat for about 5-7 minutes. If desired, thicken with cornstarch. Let it cool completely.
  6. To make the whipped cream frosting, beat heavy cream, powdered sugar, and vanilla extract together until soft peaks form.
  7. Slice each cooled cake in half to create four layers. Layer whipped cream and cherry filling between the layers.
  8. Top the cake with whipped cream, then garnish with chocolate curls and fresh cherries.
  9. Chill for 1 hour before serving. Enjoy!
