Description
A classic and easy egg salad sandwich, perfect for lunch or a quick snack.
Ingredients

- 6 hard-boiled eggs, peeled and chopped
- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- 1 tablespoon chopped chives (plus more for garnish)
- Salt and pepper to taste
- 4 slices of bread (white or whole wheat)
- Lettuce, tomato, and/or spinach (optional)
Instructions
- In a medium bowl, combine chopped eggs, mayonnaise, Dijon mustard, lemon juice, and chopped chives. Mix well until all ingredients are fully incorporated. Season with salt and pepper to taste.
- Lay out the slices of bread on a clean surface. Spread a layer of egg salad on each slice of bread. Add lettuce, tomato, and/or spinach if desired. Top with another slice of bread to complete the sandwich.
- Cut the sandwiches in half or into quarters. Serve immediately and enjoy!
Notes
Use fresh, quality ingredients for the best taste. Experiment with herbs like dill or parsley for added flavor.
