Delicious and healthy patties packed with vegetables, perfect for meal prepping or as a tasty snack.


Ingredients

  • 1 zucchini, grated
  • 2 carrots, grated
  • 1/2 cup broccoli, grated
  • 1/3 cup flour
  • 3 eggs
  • 1/2 teaspoon Cajun seasoning

Instructions

  1. In a large bowl, combine the grated zucchini, carrots, and broccoli.
  2. Add the flour, eggs, and Cajun seasoning to the bowl and mix until well combined.
  3. Heat a non-stick skillet over medium heat and add a little oil.
  4. Scoop spoonfuls of the mixture into the skillet, flattening them slightly to form patties.
  5. Cook for about 3-4 minutes on each side until golden brown.
  6. Serve warm and enjoy your veggie patties!

Notes

Squeeze out excess water from the grated zucchini to avoid soggy patties. Feel free to mix in other vegetables or herbs you enjoy.
