- 2 onions
- 8 tomatoes

Instructions
- Preheat the oven to 375°F (190°C).
- Slice the eggplants and sprinkle them with salt. Let them sit for 30 minutes to remove excess moisture.
- In a pan, sauté the onions and garlic until they become translucent.
- Add the chopped tomatoes and cook until they are soft.
- Rinse the eggplant slices and pat them dry.
- Layer half of the eggplant slices in a baking dish. Top with the tomato mixture, then layer the remaining eggplant on top.
- Bake for 25-30 minutes or until the eggplants are tender.
- Garnish with fresh parsley before serving.
