Ingredients

  • 2 eggplants
  • 2 onions
  • 8 tomatoes
  • 1 clove of garlic
  • Fresh parsley

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplants and sprinkle them with salt. Let them sit for 30 minutes to remove excess moisture.
  3. In a pan, sauté the onions and garlic until they become translucent.
  4. Add the chopped tomatoes and cook until they are soft.
  5. Rinse the eggplant slices and pat them dry.
  6. Layer half of the eggplant slices in a baking dish. Top with the tomato mixture, then layer the remaining eggplant on top.
  7. Bake for 25-30 minutes or until the eggplants are tender.
  8. Garnish with fresh parsley before serving.

Notes

For added flavor, consider sprinkling cheese on top before baking or adding other vegetables like zucchini or bell peppers.
