- 2 large boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/4 cup pesto
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat. Season chicken breasts with garlic powder, salt, and pepper.
- Cook the chicken for about 6-7 minutes on each side until golden and cooked through.
- Remove from heat and spread pesto over the chicken.
- Top with cherry tomatoes and diced avocado.
- Bake in the oven for 10-12 minutes or until heated through.
- Garnish with fresh basil before serving.
Notes
Serve warm with a side salad, garlic bread, or roasted vegetables. Store leftovers in an airtight container in the refrigerator for up to 3 days.
