- 1 cup graham cracker crumbs
Instructions
- In a large bowl, mix the softened cream cheese, pumpkin puree, powdered sugar, vanilla extract, and pumpkin pie spice until well combined.
- Chill the mixture in the refrigerator for about 30 minutes to make it easier to handle.
- Once chilled, scoop out small portions of the mixture and roll them into balls.
- Roll each ball in the graham cracker crumbs to coat.
- Place the truffles on a baking sheet lined with parchment paper and refrigerate until set.
- Serve chilled and enjoy!
