- 4 cod fillets (each about 5–6 oz)
- 2 tbsp extra virgin olive oil
- 3 garlic cloves, finely minced
- 1 lemon, zested and juiced
- 1/2 tsp dried oregano
Instructions
- Preheat your oven to 400°F (200°C).
- In a baking dish, place the cod fillets.
- Drizzle the olive oil over the fillets and sprinkle with minced garlic, lemon zest, lemon juice, and dried oregano.
- Season with salt and pepper to taste.
- Bake in the preheated oven for 12-15 minutes or until the cod is cooked through and flakes easily with a fork.
- Serve immediately, garnished with fresh herbs if desired.
