Description

A delightful dessert that layers creamy vanilla pudding and biscuits for a sweet treat that’s perfect for any occasion.


Ingredients

  • 2 cups milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter
  • Approximately 2024 plain biscuits (like Marie biscuits or digestive biscuits)
  • 1/2 cup milk or strong coffee, for dipping
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream
  • Optional: Crushed nuts or sprinkles for garnish

Instructions

  1. In a medium saucepan, whisk together the sugar and cornstarch.
  2. Gradually add in the milk, whisking until the mixture is smooth.
  3. Add the egg yolks and whisk until combined. Cook over medium heat, stirring constantly until thickened and gently boiling.
  4. Remove from heat and stir in vanilla extract and butter until melted and smooth. Let it cool slightly.
  5. Quickly dip each biscuit into the milk or coffee and arrange a layer in the bottom of an 8×8 inch dish.
  6. Spread an even layer of vanilla pudding over the biscuits and repeat layers until all ingredients are used.
  7. To make the chocolate topping, pour hot heavy cream over chocolate chips, let sit for 5 minutes, then whisk until smooth.
  8. Pour the chocolate ganache over the top layer of pudding and sprinkle with nuts or sprinkles if desired.
  9. Refrigerate for at least 4 hours or preferably overnight before slicing and serving cold.

Notes

For best results, avoid soaking the biscuits too long and stir the pudding continuously while cooking to prevent lumps.
