Ingredients
Scale
- 2 cups milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter
- Approximately 20–24 plain biscuits (like Marie biscuits or digestive biscuits)
- 1/2 cup milk or strong coffee, for dipping
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup heavy cream
- Optional: Crushed nuts or sprinkles for garnish
Instructions
- In a medium saucepan, whisk together the sugar and cornstarch.
- Gradually add in the milk, whisking until the mixture is smooth.
- Add the egg yolks and whisk until combined. Cook over medium heat, stirring constantly until thickened and gently boiling.
- Remove from heat and stir in vanilla extract and butter until melted and smooth. Let it cool slightly.
- Quickly dip each biscuit into the milk or coffee and arrange a layer in the bottom of an 8×8 inch dish.
- Spread an even layer of vanilla pudding over the biscuits and repeat layers until all ingredients are used.
- To make the chocolate topping, pour hot heavy cream over chocolate chips, let sit for 5 minutes, then whisk until smooth.
- Pour the chocolate ganache over the top layer of pudding and sprinkle with nuts or sprinkles if desired.
- Refrigerate for at least 4 hours or preferably overnight before slicing and serving cold.
Notes
For best results, avoid soaking the biscuits too long and stir the pudding continuously while cooking to prevent lumps.
