Instructions
- Prepare the crust: Combine graham cracker crumbs with melted butter and press into an 8-inch or 9-inch springform pan.
- Make the filling: Beat cream cheese until smooth, then add powdered sugar, lime juice, lime zest, and vanilla extract. Mix until well combined.
- Whip the cream: In a separate bowl, whip the cold heavy cream to stiff peaks and gently fold into the cream cheese mixture.
- Assemble the cheesecake: Spread the cream cheese filling over the crust, cover, and refrigerate for at least 5-6 hours until firm.
- Serve: Slice and garnish each piece with sweetened whipped cream.
