Ingredients

- 1 lb (450g) lean ground turkey
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 1/2 red onion, finely diced
- 1/2 tsp dried oregano
- 1 cup cooked brown rice
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- Feta cheese, crumbled
- Olive oil, lemon juice, salt, and pepper for dressing
Instructions
- Heat olive oil in a skillet over medium heat. Add the minced garlic and diced onion, and sauté until soft.
- Add the ground turkey and season with oregano, salt, and pepper. Cook until the turkey is browned and fully cooked.
- In a bowl, combine the cooked brown rice, turkey mixture, cherry tomatoes, and cucumber.
- Top with crumbled feta cheese.
- Drizzle with olive oil and lemon juice before serving.
Notes
Great as a complete meal. Feel free to add pita bread or a side salad.
