Description

A light and refreshing salad featuring sweet grilled peaches, fresh blueberries, and peppery arugula, perfect for summer.


Ingredients

  • 2 ripe peaches, halved and pitted
  • 1 tsp olive oil
  • 2 cups arugula
  • 1/2 cup fresh blueberries

Instructions

  1. Preheat the grill to medium heat.
  2. Brush the peach halves with olive oil.
  3. Place the peaches on the grill cut-side down for 2-3 minutes until grill marks appear.
  4. In a large bowl, combine arugula and blueberries.
  5. Add the grilled peaches on top.
  6. Drizzle with additional olive oil if desired and serve immediately.

Notes
