- 2 ripe peaches, halved and pitted
- 1 tsp olive oil
- 2 cups arugula
- 1/2 cup fresh blueberries
Instructions
- Preheat the grill to medium heat.
- Brush the peach halves with olive oil.
- Place the peaches on the grill cut-side down for 2-3 minutes until grill marks appear.
- In a large bowl, combine arugula and blueberries.
- Add the grilled peaches on top.
- Drizzle with additional olive oil if desired and serve immediately.
Notes
Best served fresh off the grill. Pair with grilled chicken or fish for a complete meal.
