- 2 ripe peaches, halved and pitted
- 1 tsp olive oil
- 2 cups arugula
- 1/2 cup fresh blueberries
Instructions
- Preheat the grill to medium heat.
- Brush the peach halves with olive oil.
- Place the peaches on the grill, cut side down, and grill for about 4-5 minutes until charred.
- Remove the peaches from the grill and let them cool slightly.
- In a bowl, combine arugula and blueberries.
- Slice the grilled peaches and add to the salad.
- Toss gently and serve.
Notes
For extra flavor and texture, consider adding feta cheese or nuts. Store leftovers in an airtight container in the refrigerator for up to one day.
