Ingredients

  • 2 ripe peaches, halved and pitted

  • 2 cups arugula
  • 1/2 cup fresh blueberries

Instructions

  1. Preheat the grill to medium heat.
  2. Brush the peach halves with olive oil.
  3. Place the peaches on the grill, cut side down, and grill for about 4-5 minutes until charred.
  4. Remove the peaches from the grill and let them cool slightly.
  5. In a bowl, combine arugula and blueberries.
  6. Slice the grilled peaches and add to the salad.
  7. Toss gently and serve.
