Ingredients

  • 1 cup granulated sugar
  • 1/2 cup butter, softened
  • 1/2 cup sour cream
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1/2 cup rainbow sprinkles (plus extra for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs, vanilla extract, and sour cream, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, stirring until smooth.
  6. Gently fold in the rainbow sprinkles.
  7. Pour the batter into the prepared loaf pan and sprinkle extra sprinkles on top.
  8. Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  9. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  10. Slice and serve.

Notes

Serve with butter or cream cheese. Store in an airtight container for up to 3 days or freeze for up to 3 months.
