Ingredients

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup butter, softened
- 1/2 cup sour cream
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup milk
- 1/2 cup rainbow sprinkles (plus extra for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Cream together the softened butter and sugar until light and fluffy.
- Add the eggs, vanilla extract, and sour cream, mixing until well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, stirring until smooth.
- Gently fold in the rainbow sprinkles.
- Pour the batter into the prepared loaf pan and sprinkle extra sprinkles on top.
- Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Slice and serve.
Notes
Serve with butter or cream cheese. Store in an airtight container for up to 3 days or freeze for up to 3 months.
