Ingredients

  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup hot water
  • 1 1/2 cups heavy cream, divided
  • 8 ounces semi-sweet chocolate, chopped
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease or flour a round cake pan.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. Add the oil, milk, egg, and vanilla extract; beat on medium speed until everything is combined. Slowly mix in the hot water until the batter is smooth.
  4. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean. Let the cake cool.
  5. For the mousse, heat 1/2 cup of cream in a saucepan until it starts to simmer. Pour it over the chopped chocolate, let it sit for a minute, then stir until smooth. Cool to room temperature.
  6. In another bowl, whip the remaining cream with powdered sugar and vanilla extract until stiff peaks form. Fold in the cooled chocolate mixture.
  7. Once the cake is cool, slice it horizontally into two layers. Spread the mousse on the bottom layer, then place the second layer on top.
  8. To make the ganache, heat 1/2 cup of cream and pour it over the chocolate chips. Let it sit for a minute, then stir until smooth. Pour the ganache over the cake.
  9. Refrigerate the cake for at least 2 hours before serving.

Notes

This cake is best served chilled. Garnish with fresh berries or whipped cream for an extra special touch.
