- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder

- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup hot water
- 1 1/2 cups heavy cream, divided
- 8 ounces semi-sweet chocolate, chopped
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup heavy cream
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and grease or flour a round cake pan.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- Add the oil, milk, egg, and vanilla extract; beat on medium speed until everything is combined. Slowly mix in the hot water until the batter is smooth.
- Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean. Let the cake cool.
- For the mousse, heat 1/2 cup of cream in a saucepan until it starts to simmer. Pour it over the chopped chocolate, let it sit for a minute, then stir until smooth. Cool to room temperature.
- In another bowl, whip the remaining cream with powdered sugar and vanilla extract until stiff peaks form. Fold in the cooled chocolate mixture.
- Once the cake is cool, slice it horizontally into two layers. Spread the mousse on the bottom layer, then place the second layer on top.
- To make the ganache, heat 1/2 cup of cream and pour it over the chocolate chips. Let it sit for a minute, then stir until smooth. Pour the ganache over the cake.
- Refrigerate the cake for at least 2 hours before serving.
Notes
This cake is best served chilled. Garnish with fresh berries or whipped cream for an extra special touch.
