A quick and delicious chicken casserole with tender chicken, tasty vegetables, and a fluffy biscuit topping, all baked in one dish.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup frozen peas and carrots (or mixed veggies)
  • 1 cup frozen corn
  • 1/2 cup melted butter
  • 1 cup biscuit mix (like Bisquick)
  • 1 cup milk
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Spread the shredded chicken evenly in the bottom of the dish. Top with peas, carrots, and corn.
  3. In a bowl, whisk together the biscuit mix, milk, garlic powder, salt, and pepper. Pour this mixture over the chicken and veggies.
  4. Spread the cream of chicken soup over the top without stirring. Sprinkle with shredded cheddar cheese.
  5. Bake for 35–40 minutes until the top is golden and bubbly. Garnish with chopped parsley and serve warm!

Notes

For extra flavor, add herbs like thyme or rosemary to the chicken layer. You can use fresh cooked chicken if you don’t have any leftovers.
