Quick and delicious tacos filled with savory chicken, sweet caramelized pineapple, and fresh cilantro. Perfect for family dinners or casual gatherings.


Ingredients

  • 2 boneless, skinless chicken breasts (or thighs)
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1 cup pineapple chunks
  • 8 corn or flour tortillas
  • 1/2 cup chopped cilantro
  • 1 lime (for serving)

Instructions

  1. In a bowl, combine the olive oil, chili powder, cumin, and smoked paprika.
  2. Coat the chicken breasts in the spice mixture, making sure they’re well covered.
  3. Heat a skillet over medium-high heat and cook the chicken until fully cooked, about 5-7 minutes on each side.
  4. Once done, remove the chicken and let it rest for a few minutes before slicing into strips.
  5. In the same skillet, add the pineapple chunks and cook until they caramelize, about 3-4 minutes.
  6. Warm the tortillas in a separate skillet or directly over the flame until soft.
  7. Assemble the tacos by placing sliced chicken, caramelized pineapple, and chopped cilantro in each tortilla.
  8. Serve with lime wedges on the side for squeezing over the tacos.
