Ingredients

- 2 boneless, skinless chicken breasts (or thighs)
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp smoked paprika
- 1 cup pineapple chunks
- 8 corn or flour tortillas
- 1/2 cup chopped cilantro
- 1 lime (for serving)
Instructions
- In a bowl, combine the olive oil, chili powder, cumin, and smoked paprika.
- Coat the chicken breasts in the spice mixture, making sure they’re well covered.
- Heat a skillet over medium-high heat and cook the chicken until fully cooked, about 5-7 minutes on each side.
- Once done, remove the chicken and let it rest for a few minutes before slicing into strips.
- In the same skillet, add the pineapple chunks and cook until they caramelize, about 3-4 minutes.
- Warm the tortillas in a separate skillet or directly over the flame until soft.
- Assemble the tacos by placing sliced chicken, caramelized pineapple, and chopped cilantro in each tortilla.
- Serve with lime wedges on the side for squeezing over the tacos.
