- 1 teaspoon vanilla extract
- 1 1/2 cups mixed fresh berries (blueberries, raspberries, strawberries)
- 1/2 cup all-purpose flour (for crumb topping)
- 1/3 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 cup cold unsalted butter, cut into cubes (for crumb topping)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round or square baking dish.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
- Add the softened butter, eggs, sour cream, and vanilla to the dry ingredients. Beat until the mixture is smooth and creamy.
- Gently fold in the mixed berries with a spatula. Be careful not to crush them.
- Pour the batter into the prepared baking dish and spread it evenly.
- In a small bowl, combine the flour, brown sugar, and cinnamon for the crumb topping.
- Add the cold butter and mix with a fork or your fingers until the mixture is crumbly.
- Sprinkle the crumb topping evenly over the batter.
- Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean and the top is golden.
- Let the cake cool slightly before serving. Enjoy warm or at room temperature!
Notes
For best flavor, use fresh berries or thawed frozen berries. Serve with whipped cream or ice cream for extra richness.
