  • 250g digestive biscuits or graham crackers, crushed
  • 125g unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1 can (397g) dulce de leche or thick caramel sauce
  • 3 ripe bananas
  • 225g full-fat cream cheese, softened
  • 1 can (397g) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 250ml heavy whipping cream
  • 250ml heavy whipping cream (for topping)
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract (for topping)
  • 12 bananas, sliced for garnish
  • Extra crushed biscuits for sprinkling

Instructions

  1. Make the crust: In a bowl, mix the crushed biscuits with the melted butter and sugar until it looks like wet sand. Press the mixture firmly into a 9-inch pie dish and chill for at least 30 minutes.
  2. Assemble the base: Spread the dulce de leche over the crust and layer with sliced bananas.
  3. Prepare the cream filling: Beat the cream cheese until smooth. Then add the condensed milk and vanilla extract and mix well. In a separate bowl, whip 250ml heavy cream to stiff peaks and fold it into the cream cheese mixture.
  4. Pour the cream filling: Pour the cream filling over the banana layer and chill for at least 6 hours, or preferably overnight.
  5. Prepare the topping: Whip the remaining heavy cream with powdered sugar and vanilla to stiff peaks. Spread it over the pie before serving.
  6. Garnish: Top the pie with banana slices and crushed biscuits. Serve immediately.

Notes

Use ripe bananas for the best sweetness. Make the pie a day ahead for optimal flavor and ease of slicing.
