- 250g digestive biscuits or graham crackers, crushed
- 125g unsalted butter, melted
- 2 tablespoons granulated sugar
- 1 can (397g) dulce de leche or thick caramel sauce
- 3 ripe bananas
- 225g full-fat cream cheese, softened
- 1 can (397g) sweetened condensed milk
- 1 teaspoon vanilla extract
- 250ml heavy whipping cream
- 250ml heavy whipping cream (for topping)
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract (for topping)
- 1–2 bananas, sliced for garnish
- Extra crushed biscuits for sprinkling
Instructions
- Make the crust: Mix crushed biscuits with melted butter and sugar until it looks like wet sand. Press this mixture into a 9-inch pie dish and chill for 30 minutes.
- Assemble the base: Spread dulce de leche over the chilled crust. Arrange sliced bananas over the caramel.
- Prepare the cream filling: Beat the cream cheese in a bowl until smooth. Add the sweetened condensed milk and vanilla, and mix well.
- Whip the cream: In another bowl, whip 250ml of cream until stiff peaks form. Gently fold it into the cream cheese mixture.
- Fill the pie: Pour the cream filling over the banana layer in the pie dish. Spread it evenly and refrigerate for at least 6 hours, or preferably overnight.
- Decorate: Whip the remaining cream with powdered sugar and vanilla until stiff peaks form. Spread or pipe this on top of the pie. Garnish with banana slices and extra crushed biscuits. Serve immediately.
Notes
Use ripe bananas for the best flavor. To prevent browning, add lemon juice on the bananas before layering.
