Easy Bacon Fried Rice

Description

A quick and tasty dish combining crispy bacon, fluffy rice, and colorful vegetables. Perfect for lunch or dinner!


Ingredients

  • 3 cups cooked white rice (preferably day-old)
  • 4 strips bacon, chopped
  • 2 eggs, lightly beaten
  • 1/2 cup green beans, chopped
  • 1/3 cup peas
  • 2 scallions, sliced
  • 2 tbsp soy sauce
  • 1 tbsp oil (optional)
  • Black pepper to taste

Instructions

  1. In a large skillet or wok, cook chopped bacon until crispy. Remove and set aside, leaving the rendered fat.
  2. In the same pan, scramble eggs and remove them when just set.
  3. Add green beans and peas to the pan. Stir-fry for 2–3 minutes.
  4. Stir in rice and break up any clumps. Return bacon and eggs to the pan.
  5. Pour in soy sauce and toss everything until evenly coated. Add scallions and black pepper. Stir well and serve hot.

Notes

For the best results, use day-old rice as it’s drier and separates better when frying. Adjust the soy sauce to taste.
