A quick and tasty dish combining crispy bacon, fluffy rice, and colorful vegetables. Perfect for lunch or dinner!
Ingredients

- 3 cups cooked white rice (preferably day-old)
- 4 strips bacon, chopped
- 2 eggs, lightly beaten
- 1/2 cup green beans, chopped
- 1/3 cup peas
- 2 scallions, sliced
- 2 tbsp soy sauce
- 1 tbsp oil (optional)
- Black pepper to taste
Instructions
- In a large skillet or wok, cook chopped bacon until crispy. Remove and set aside, leaving the rendered fat.
- In the same pan, scramble eggs and remove them when just set.
- Add green beans and peas to the pan. Stir-fry for 2–3 minutes.
- Stir in rice and break up any clumps. Return bacon and eggs to the pan.
- Pour in soy sauce and toss everything until evenly coated. Add scallions and black pepper. Stir well and serve hot.
Notes
For the best results, use day-old rice as it’s drier and separates better when frying. Adjust the soy sauce to taste.
