- 1 lb boneless, skinless chicken thighs or breasts
- 2 tbsp olive oil
- 2 tsp dried oregano
Instructions
- Preheat your oven to 375°F (190°C).
- In a large baking dish, combine the rice, chicken broth, olive oil, and dried oregano.
- Place the chicken thighs or breasts on top of the rice mixture, ensuring they are submerged in the liquid.
- Cover the dish tightly with aluminum foil, and bake for 45-50 minutes, or until the chicken is cooked through and the rice is tender.
- Remove from the oven and let it sit for 5-10 minutes before serving.
- Serve with tzatziki sauce on the side.
Notes
Make sure the chicken is properly submerged in the liquid to cook evenly. You can add veggies like bell peppers or spinach for extra nutrition and flavor.
