- Fluffy rice (for serving)
- Homemade tzatziki sauce

- Crisp red onions (for topping)
- Fresh lemon wedge (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- In a baking dish, combine the cubed chicken with olive oil, oregano, salt, and pepper.
- Layer the fluffy rice underneath the chicken in the dish.
- Bake for 25-30 minutes until the chicken is cooked through.
- Remove from the oven and top with tzatziki sauce, roasted cherry tomatoes, and red onions.
- Serve with a fresh lemon wedge.
