  • Salt & pepper, to taste
  • Fluffy rice (for serving)
  • Homemade tzatziki sauce
  • Roasted cherry tomatoes (for topping)
  • Crisp red onions (for topping)
  • Fresh lemon wedge (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, combine the cubed chicken with olive oil, oregano, salt, and pepper.
  3. Layer the fluffy rice underneath the chicken in the dish.
  4. Bake for 25-30 minutes until the chicken is cooked through.
  5. Remove from the oven and top with tzatziki sauce, roasted cherry tomatoes, and red onions.
