Delightful cookies combining creamy dulce de leche with a soft, chewy texture, topped with cinnamon sugar and cream cheese frosting.

- 1 (14 oz) can Eagle Brand® Sweetened Condensed Milk
- 1/2 cup unsalted butter, softened
- 1/3 cup granulated sugar
- 2 tbsp brown sugar
- 2/3 cup Eagle Brand® Sweetened Condensed Milk
- 1 large egg yolk
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tbsp cornstarch
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp cream of tartar
- 1/4 tsp salt
- 1/2 tsp cinnamon powder
- 3 tbsp granulated sugar (for cinnamon sugar)
- 1/2 tsp cinnamon powder (for cinnamon sugar)
- 2 sticks unsalted butter, softened (for frosting)
- 1/4 cup cream cheese, softened
- 2/3 cup Eagle Brand® Sweetened Condensed Milk (for frosting)
- 2 tbsp dulce de leche (for frosting)
- 2 tsp vanilla extract (for frosting)
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the dulce de leche by placing the sweetened condensed milk in a small loaf pan inside a larger baking dish filled with water and bake for 2.5 to 4 hours, stirring every 30 minutes. Let it cool completely.
- To make the cookie dough, beat the softened butter, granulated sugar, and brown sugar on medium-high speed for 1 minute.
- Add the sweetened condensed milk, egg yolk, and vanilla extract; mix until combined.
- Gradually mix in flour, cornstarch, baking powder, baking soda, cream of tartar, salt, and cinnamon.
- Scoop 1/3 cup of dough, roll in cinnamon sugar, and chill for 20 minutes.
- Bake cookies for 12-15 minutes until golden around the edges.
- For the cream cheese frosting, beat softened butter and cream cheese until fluffy. Then mix in sweetened condensed milk, dulce de leche, and vanilla extract until smooth.
- Pipe the frosting on cooled cookies and top with a swirl of dulce de leche, and sprinkle with cinnamon if desired.
- Serve immediately or store in the fridge.
