Description

Delightful cookies combining creamy dulce de leche with a soft, chewy texture, topped with cinnamon sugar and cream cheese frosting.


Ingredients

  • 1 (14 oz) can Eagle Brand® Sweetened Condensed Milk
  • 1/2 cup unsalted butter, softened
  • 1/3 cup granulated sugar
  • 2 tbsp brown sugar
  • 2/3 cup Eagle Brand® Sweetened Condensed Milk
  • 1 large egg yolk
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tbsp cornstarch
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp cream of tartar
  • 1/4 tsp salt
  • 1/2 tsp cinnamon powder
  • 3 tbsp granulated sugar (for cinnamon sugar)
  • 1/2 tsp cinnamon powder (for cinnamon sugar)
  • 2 sticks unsalted butter, softened (for frosting)
  • 1/4 cup cream cheese, softened
  • 2/3 cup Eagle Brand® Sweetened Condensed Milk (for frosting)
  • 2 tbsp dulce de leche (for frosting)
  • 2 tsp vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the dulce de leche by placing the sweetened condensed milk in a small loaf pan inside a larger baking dish filled with water and bake for 2.5 to 4 hours, stirring every 30 minutes. Let it cool completely.
  3. To make the cookie dough, beat the softened butter, granulated sugar, and brown sugar on medium-high speed for 1 minute.
  4. Add the sweetened condensed milk, egg yolk, and vanilla extract; mix until combined.
  5. Gradually mix in flour, cornstarch, baking powder, baking soda, cream of tartar, salt, and cinnamon.
  6. Scoop 1/3 cup of dough, roll in cinnamon sugar, and chill for 20 minutes.
  7. Bake cookies for 12-15 minutes until golden around the edges.
  8. For the cream cheese frosting, beat softened butter and cream cheese until fluffy. Then mix in sweetened condensed milk, dulce de leche, and vanilla extract until smooth.
  9. Pipe the frosting on cooled cookies and top with a swirl of dulce de leche, and sprinkle with cinnamon if desired.
  10. Serve immediately or store in the fridge.

Notes

Store in an airtight container in the fridge for up to one week or freeze for up to three months.
