Description
Duchess Potatoes are a delightful twist on traditional mashed potatoes with a creamy texture and elegant appearance, baked to a golden brown.

- 2 1/2 pounds Yukon or Russet potatoes
- 4 tablespoons unsalted butter (divided)
- 1/3 cup heavy cream
- 1/4 teaspoon nutmeg
- Salt and pepper, to taste
- 1/3 cup Parmesan cheese
- 4 large egg yolks
Instructions
- Peel the potatoes, removing any blemishes or spots. Cut the potatoes into large, even-sized chunks. Place the cut potatoes in water to prevent discoloration, then rinse until the water runs clear.
- Transfer the potatoes to a large pot, cover with water, and add 1-2 teaspoons of salt. Bring to a boil and cook until fork-tender.
- Once cooked, drain the potatoes and return them to the pot. Heat on low for 1 minute to remove excess moisture.
- Transfer the potatoes to a bowl, add 2 tablespoons of butter, heavy cream, nutmeg, Parmesan, salt, and pepper. Mash until smooth.
- Add the egg yolks and mash until incorporated.
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Transfer the mashed potatoes to a pastry bag fitted with a large star tip. Pipe onto the baking sheet in 2-inch tall mounds.
- Brush with the remaining melted butter and bake for 20-25 minutes until golden brown and crisp.
- Serve immediately.
Notes
For extra richness, consider adding more butter or cream. You can also sprinkle with paprika or additional cheese before baking for extra flavor.
