- 1 cup strawberry purée (fresh or frozen strawberries blended)
- 1⁄2 cup milk
- A few drops of pink food coloring (optional)
- 1 cup unsalted butter (softened) for frosting
- 4 cups powdered sugar for frosting
- 1/2 cup strawberry purée for frosting
- 1 tsp vanilla extract for frosting
- 2 tbsp heavy cream (optional, to adjust frosting consistency)
- Fresh strawberries for garnish
- Whipped cream for garnish
Instructions
- Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
- Sift together the flour, baking powder, and salt in a bowl.
- Cream the butter and sugar together until light and fluffy. Add the eggs one by one, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients while alternating with the strawberry purée and milk. Start and end with the dry mix. If you want, add a few drops of pink food coloring.
- Divide the batter evenly between the prepared pans. Bake for about 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool completely.
- For the frosting, beat the butter until creamy. Gradually add the powdered sugar, strawberry purée, and vanilla extract. Use heavy cream to adjust the frosting consistency if needed.
- Place one layer of the cooled cake on a serving plate. Spread a thick layer of frosting on top, then add the second cake layer and cover the whole cake with frosting.
- Drizzle with a glaze if you wish, pipe whipped cream swirls, and top with fresh strawberries. Chill the cake before serving for best results. Pro Tip: Add a layer of strawberry jam between the cake layers for an extra fruity burst!
