  • 1 cup strawberry purée (fresh or frozen strawberries blended)
  • 1⁄2 cup milk
  • A few drops of pink food coloring (optional)
  • 1 cup unsalted butter (softened) for frosting
  • 4 cups powdered sugar for frosting
  • 1/2 cup strawberry purée for frosting
  • 1 tsp vanilla extract for frosting
  • 2 tbsp heavy cream (optional, to adjust frosting consistency)
  • Fresh strawberries for garnish
  • Whipped cream for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
  2. Sift together the flour, baking powder, and salt in a bowl.
  3. Cream the butter and sugar together until light and fluffy. Add the eggs one by one, mixing well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients while alternating with the strawberry purée and milk. Start and end with the dry mix. If you want, add a few drops of pink food coloring.
  5. Divide the batter evenly between the prepared pans. Bake for about 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool completely.
  6. For the frosting, beat the butter until creamy. Gradually add the powdered sugar, strawberry purée, and vanilla extract. Use heavy cream to adjust the frosting consistency if needed.
  7. Place one layer of the cooled cake on a serving plate. Spread a thick layer of frosting on top, then add the second cake layer and cover the whole cake with frosting.
  8. Drizzle with a glaze if you wish, pipe whipped cream swirls, and top with fresh strawberries. Chill the cake before serving for best results. Pro Tip: Add a layer of strawberry jam between the cake layers for an extra fruity burst!
