- 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 1/2 cups granulated sugar
- 1 cup unsalted butter, softened
- 3 1/2 cups powdered sugar
- 1/2 cup heavy cream
- 2 teaspoons vanilla extract
- Pinch of salt
- Chocolate shavings (for garnish)
- Banana slices (for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line two 9-inch cake pans with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
- In a large bowl, beat the eggs, sugar, buttermilk, vegetable oil, and vanilla extract until smooth. Stir in the mashed bananas.
- Gradually add the dry ingredients to the wet ingredients, mixing until everything is combined.
- Pour the batter evenly into the prepared pans and bake for 30-35 minutes. Check if it’s done by inserting a toothpick in the center; it should come out clean.
- Allow the cakes to cool completely before frosting.
- For the chocolate frosting, beat the softened butter in a large bowl until light and fluffy. Gradually add the powdered sugar and cocoa powder while mixing well.
- Add the heavy cream, vanilla extract, and a pinch of salt. Beat until the frosting is smooth and creamy.
- To assemble the cake, place one layer on a serving plate and spread a generous layer of chocolate frosting on top. Place the second layer on top and frost the top and sides evenly.
- Garnish with chocolate shavings and banana slices.
- Chill the cake for 30 minutes before slicing for the best results.
Notes
Make sure your bananas are very ripe for the best flavor and moisture. Let your cakes cool completely before frosting to prevent melting the frosting.
