Instructions
- Preheat your oven to 350°F (175°C). Grease and line two 9-inch cake pans.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
- In a large bowl, beat together the eggs, sugar, buttermilk, vegetable oil, and vanilla extract. Stir in the mashed bananas.
- Slowly add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter evenly into the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool completely before frosting.
- Prepare the chocolate frosting by beating the softened butter until light and fluffy. Gradually mix in the powdered sugar and cocoa powder until well combined.
- Add the heavy cream, vanilla extract, and a pinch of salt, then beat until the frosting is smooth and creamy.
- Assemble the cake by placing one layer on a serving plate, spreading a layer of frosting, and topping with the second layer. Frost the top and sides evenly and garnish with chocolate shavings and banana slices.
- Let the cake sit for 30 minutes before slicing to help the frosting set.
Notes
Use overripe bananas for the best flavor. You can freeze the unfrosted cake layers for up to 2 months.
