- 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder

- 1/2 cup vegetable oil

- 1/2 cup heavy cream

- Pinch of salt
- Chocolate shavings for garnish
- Banana slices for garnish
Instructions
- Preheat your oven to 350°F (175°C). Grease and line two 9-inch cake pans with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
- In a large bowl, beat together the eggs, granulated sugar, buttermilk, vegetable oil, and vanilla extract until well combined. Stir in the mashed bananas.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter evenly into the prepared pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Allow the cakes to cool completely before frosting.
- In a large bowl, beat the softened butter until light and fluffy. Gradually add the powdered sugar and cocoa powder, mixing well until smooth. Add the heavy cream, vanilla extract, and a pinch of salt, then beat until the frosting is creamy and spreadable.
- Place one layer of cake on a serving plate and spread a generous layer of chocolate frosting on top. Add the second cake layer and frost the top and sides evenly. Garnish with chocolate shavings and banana slices.
- Let the cake sit for about 30 minutes before slicing for the best results.
Notes
Use very ripe bananas for best flavor and moisture. Store covered at room temperature for up to three days.
